ViticultureIn conversion to Organic. Manual harvest using small crates. First quality check of the grapes while still on the vine. Harvest stored in a cold room. Whole-cluster pressing. Date of harvest: between 23rd and 24th August 2018.
The parcel is vinified in thermo-regulated stainless steel tanks. Stabulation à froid and settling is followed by alcoholic fermentation maintained at 16° to 18°C.
In 500 litre oak barrels for 9 months.
3 800 bottles. Bottled 2nd August 2019.
Colour: pale yellow. The nose reveals aromas of brioche and lightly buttered toast. In the mouth, it is fresh and lively with a wonderful tension and a long finish.
Perfect with grilled fish, white meat or simply as an aperitif.
