SOILS: Argilo-limestone
VITICULTURE: Manual harvest using small crates. First checking/sorting of the grapes on the vine. Harvest stored in a cold room. Manuel sorting table for second check. Grapes are then crushed and transferred by the action of peristaltic pump into stainless steel tanks.
Winemaking
In temperature-controlled stainless steel tanks. Cold soak pre-fermentation, then yeast strains are added to start the alcoholic fermentation. The cuvaison will last for 21 to 28 days under controlled temperature. Maturation in temperature-controlled stainless steel tanks and oak barrels of 225 and 400L.Tasting notes
COLOUR: Ruby; hints of purple.
NOSE: Morello cherry; myrtle; spices (cardamom, black pepper).
PALATE: Plums: blackcurrants; acacia; black pepper; hint of new oak.

Bought this wine because of the Wine Advocate score. I was looking for something different as I was bored of drinking the same old wine and this was a good choice. It is well balanced and smooth and it is also just as good the next day.

This is a new producer for me to try and I was not disappointed. Wow! It is a bold red with some delicious plums and black currant fruit. And some nice spicy oak and pepper. I don’t like too much oak, but this was nice.

There is some lovely ripe fruit in this wine, with some nice spice too. Great colour too. We opened it up as a mid-week treat and had it with a steak and ale pie. It was just right. I haven’t heard of the Terrasses du Larzac region before so I will have to look for some more wines from the region to try.
