Terroir

In the foothills of the Larzac plateau, the vineyard of Château Saint-Jean d'Aumières spreads out over the hillside overlooking the gorges of the Upper Hérault valley. Syrah, Grenache and old vine Carignan reach perfect maturity here, bringing power and class to this cuvée.

Winemaking

Carignan is vinified in whole bunches to intensify aromas. The other varietals are vinified separately and have long vatting periods of three weeks at 25 to 30°C. The elegance and finesse of this cuvée shows itself after 12 months maturing in barrel.

Tasting notes

Colour: deep red with ruby highlights. Nose: cassis and myrtle aromas delicately combine with notes of roasting. Palate: the structure is a complex and powerful melange of candied fruit, cacao and bay leaves, with a long finish revealing lovely spice notes. A flavour explosion in the mouth!

Food matching

Filet of beef Rossini and black truffle; or, if you're feeling indulgent, a chocolate fondant with a raspberry centre.

Serving temperature

Between 15 and 18 °C.
