Winemaking

Destemming; cold fermentation in thermo-regulated stainless steel tanks for 3 weeks.

Tasting notes

COLOUR: garnet NOSE: ripe red fruits; wild herbs; peppercorn PALATE: crushed cranberries; figs; thyme; spice; well-integrated tannins.

Veal ragout; chicken; fish (mullet, grilled salmon...); Mediterranean stuffed vegetables.
