Harvest/viticultureIn conversion to organic at the time. Manual harvest using small crates. First quality check at the vine. Harvest stored in a cold room. Whole bunch pressing. Date of harvesting Sauvignon, 28th August 2019; Albarino, 2nd September 2019.
The grapes were vinified separately in thermo-regulated stainless steel vats. Cold stabilisation and settling. Alcoholic fermentation between 16° and 18°C.
