TERROIR: plots are located in the municipalities of Puéchabon and Aniane.
EXPOSURE: south/west. SOILS: limestone.
VITICULTURE: disbudding and green harvest; short pruning; Syrah and Grenache trained as Royat; Mourvêdre trained as low Gobelet.
Winemaking
Manual harvest, optimal harvesting, grapes transported in small crates; destemming. Fermentation in vats around 25 ° C; daily pumping over during Alcohol Fermentation (AF); Malolactic fermentation at the end of the AF. 13 months in 400 litre oak barrels.Tasting notes
COLOUR: deep red, black cherry
NOSE: red fruits, wild herbs, roasted aromas, spice
PALATE: finely balanced tannins, black cherry, plum, hints of pepper and liquorice, wild herbs; long finish.
Food matches
Venison with juniper; char-grilled meats; wild mushroom and thyme ragout.Serving
Decant a few hours before and serve at 18° C.

A good thing the description said it was be good to decant this wine as it did open up after being opened for a few hours. This was a really good wine and one of my favourites so far from buying a mixed box of wine. I am happy that I got two of them.

This was one of those wines that was hard to put down. It is rich but is well structured so it stays elegant. The nose is really lifted with those wild herbs and the liquorice and cherry on the palate made this rather more-ish. It was well matched with some venison stew and buttered gnocchi.

More? Yes please! This was good stuff. If you love the south of France, this takes you right back there. It is almost like you are sitting in an outdoor café next to a square enjoying a drink after dinner.
