Syrah (70%) / Grenache (25%) / Mourvèdre (5%)

Terroir & viticulture

SOILS: Limestone deposits; gravel subsoil VITICULTURE: Manual harvest using small crates. First checking/sorting of the grapes on the vine. Harvest stored in a cold room. Manual sorting table for second check/sorting of the grapes.

Winemaking

In thermo-regulated stainless steel vats. Cold pre-fermentation maceration. Vatting is from 21 to 28 days under controlled temperatures. Aged in oak barrels of 228 L and 300 L for 18 months.

Tasting notes

COLOUR: Deep black-red with purple reflections. NOSE: Plums; crème de cassis; mocha; spices. PALATE: Intense dark fruit; warm spice; black olives; crushed pepper; fine-grained tannins.

Food matches

Sirloin steak and sauteed mushrooms; marinated venison stew; stuffed red peppers with garlic, rosemary and thyme.
