SOILS: Clay-limestone and gravels
VITICULTURE: Manual harvest, using small crates. Grapes are checked when picked, and the varietals are stored separately in a cold room before being pressed. They are checked again before the press is filled.
WinemakingGrapes vinified separately in thermo-regulated stainless steel vats. Cold stabilisation first, then settling. Alcoholic fermentation between 16 and 18°c. Maturation: 3 months in a stainless steel thermo-regulated tank for the Syrah; three months ageing in 500 litre oak barrels for the Grenache.
Zéfir is a gourmet rosé with a hint of salinity.
NOSE: delicate; aromatic.
PALATE: beautiful tension and freshness in the mouth.
